Fiesta En Jalisco has some of the most authentic and delicious Mexican food in Livingston that you should check out when celebrating Cinco de Mayo this year. Fiesta has been around for 21 years and is still going strong.
Jocy Gomez is a senior at Park High School whose family owns and works at Fiesta En Jalisco, making very good and filling food. Jocy said her parents, Ponciano Gomez and Elba Gomez, “have managed to build Fiesta En Jalisco while having a baby,” her older sister, Elba Jr., who is now 22 years old and manages the restaurant on Park Street. Marco Murillo, who is Jocy’s uncle, along with four of her other uncles, has a contract of ownership with the Fiesta En Jalisco branch.
Popular food choices are the California burritos, which have skirt meat, fries, pico de gallo, lettuce, guacamole, and chipotle-ranch on the side in wrap style. Fajitas on a sizzling platter are a tasty option with your choice of steak, chicken, or shrimp sautéed with bell pepper, tomato, and onion, served with a side of guacamole, pico de gallo, sour cream, and tortillas.
Tacos are also a preferred choice of food, all being loaded with meat such as marinated pork, steak, chicken, guacamole, beans, pico de gallo with a crunchy or soft outside.
Of all the meals I have tried at Fiesta, my favorite one is the classic enchiladas topped with cheese and red sauce, with shredded, flavorful, mouth-watering chicken along with rice and refried beans. The whole dish mixes very well together and complements each other.
As I waited for my food to cool down, I let my eyes wander around the statues on walls and ledges, art-covered seats, and very colorful, art-filled surroundings.
This is a very friendly, relaxed environment with complimentary fresh salsa and warm chips while you wait for your meal. The service was even warmer, with every greeting very polite, patient, and helpful. Overall, the restaurant is amazing all around, and the food is great, from breakfast to dinner.

About the Contributor

Oliver Zeman, a senior at Park High School, is a returning staff of the Geyser who enjoys photography, teamwork, and editing photo & video. His favorite part of journalism is getting to work as a team on yearbook pages and seeing the creativity between others flow into one, however when it comes to writing, he is very thankful for Mrs. Lendes editing. He sees journalism as an important part of Park High, as it is able to create community and inform others of what may be going on around them. When he isn’t inside playing guitar or editing photos, he can be found on the river, in the mountains, or taking landscape photography. Oliver describes himself as outdoorsy, active, and outgoing, and after graduation he plans to travel and later attend college to obtain his degree in environmental engineering. He is excited to see what the 2025-2026 school year has in store and to see what everyone’s creativity has to offer for the upcoming yearbook.
